Quinoa Blueberry Pancakes

Ingredients

  • 2.5 cups cooked quinoa
  • 2 tsp. grape seed oil can use other oil if you do not have grape seed oil
  • 1 cup almond milk
  • 4 eggs
  • 1 tbs. honey
  • 1.5 cup blueberries
  • 1 tsp. salt

Instructions

  • In a blender, mix milk, eggs, honey, quinoa and oil together
  • Once smooth add salt and baking powder and blend for a few seconds
  • Preheat griddle and spray with cooking spray
  • Pour ¼ cup batter on the griddle
  • Sprinkle blueberries over the batter and cook
  • Once there are bubbles, flip and cook the other side
  • Pancakes are done when golden brown
