  • 1 medium banana
  • 2 eggs
  • 1 TBS coconut flour

Add-ins for extra flavor (optional):

  • Small dash of vanilla
  • Pinch of cinnamon
  • Pinch of salt


  • Mash bananas in a bowl then whisk in both eggs and stir in coconut flour.
  • Heat waffles iron and grease with butter or coconut oil
  • Place batter in middle of iron and cook for 2 minutes or until waffle iron top pulls off cleanly and waffle is golden brown.

Topping Options:

  • Yogurt and granola
  • Grass-fed butter and 100% pure maple syrup or honey
  • Peanut butter and Enjoy Life mini chocolate chips
